Our pasteurizing vat by Micro Dairy Designs. It is capable of holding 15 gallons of milk at one time. The pasteurizer is lined with a steel vat, which holds our milk, and allows the outside of the inner vat to create a water jacket for heating water around the milk to bring it up to temperature. We pasteurize our milk at the lowest temperature of 147 degrees F and is held for 30 minutes, then cooled down to 40 degrees F prior to bottling. During the pasteurization process, the pasteurizer is connected to a chart recorder to record our temperatures for the state. We also use this vat to store our RAW milk prior to bottling.
